Recipe for today: Homemade Granola (vegan style)

Homemade Granola

What you need...

  • 3 cups rolled oats
  • 1 cups walnuts
  • 1/2 cup flaxseed
  • 3/4 cup shredded sweet coconut
  • 1/4 cup plus 2 tablespoons raw sugar
  • 1/4 cup plus 2 tablespoons Agave Nectar
  • 1/4 cup olive oil
  • 1 tsp vanilla extract
  • 3/4 teaspoon sea salt
  • 1 tsp ground cinnamon
  • 1 cup cranberry raisins

*You could add sunflower seeds, sliced almonds, wheat germ, & oat bran or substitute cranberry raisins with raisins.  (play around with the recipe to meet your needs)

What you do...
Preheat oven to 250 degrees F.  (*I heated mine at 350 degrees f., depends how long you want to bake it, less time at 350, less soaking)

In a large bowl, combine the oats, nuts, coconut, and brown sugar.

In a separate bowl, combine maple syrup, oil, and salt. Combine both mixtures and pour onto 2 sheet pans. Cook for 1 hour and 15 minutes, stirring every 15 minutes to achieve an even color.

Remove from oven and transfer into a large bowl.

**Don't forget to add raisins and mix until evenly distributed.
