Recipe for today: Roasted Chickpea Wraps

This doesn't get much easier than this. InVegetablesWeTrust came up with this super-easy, ultra-tasty wrap you can whip up in a flash. They're great for lunch, as a side dish, or warmed up for a snack. You can get creative with your favorite seasoning or try this spicy Cajun version.

Ingredients:
1-2 Tbsp. olive oil
Cajun seasoning (you can make your own)
salt and pepper to taste
15 oz. can (1 1/2 cups) cooked chickpeas
hummus (buy your favorite or make your own)
soft wraps (pita bread or tortillas)

Directions:
1. Drain chickpeas and rinse, then shake them in a colander to dry them off a bit. 
2. Put in a roasting dish, drizzle olive oil over them, sprinkle on Cajun seasoning and grab a spoon and mix it through.
3. Roast in oven at 375°F for about 30 minutes, or until they are nice and crisp on the outside and still soft on the inside.
4. Serve in wraps with hummus.
